Indian food, on the other hand, uses a wide variety of spices and herbs, often creating rich, creamy curries or dry dishes like tandoori. The flavors are deeper and more intense, with a heavier use of spices like cumin, turmeric, and cardamom. I had a similar realization dining at fine dining Sydney (Pont Dining Room) where they blended flavors beautifully, showing me how distinct yet equally delicious different cuisines can be.
