what’s the difference between a Vietnamese restaurant and a Indian restaurant?

Vietnamese cuisine often focuses on fresh herbs, rice noodles, and lighter broths, with a balance of sweet, sour, salty, and spicy flavors. Think pho, banh mi, and spring rolls. Indian food, on the other hand, uses a wide variety of spices and herbs, often creating rich, creamy curries or dry dishes like tandoori. The flavors are deeper and more intense, with a heavier use of spices like cumin, turmeric, and cardamom. I had a similar realization dining at fine dining Sydney (Pont Dining Room) where they blended flavors beautifully, showing me how distinct yet equally delicious different cuisines can be.
