Yeah I agree with dualcore; dont invest a load of money into a server which is always going to be empty, you'll just end up kicking yourself, go for what makes the most sense right now financially.
Both are great machines (you could cut down on the RAM alittle bit though imo)

If I had the capital, i would invest into newer and better servers... just because its possible that you'll be blaming yourself for choosing older hardware, when they are about the same price, and that if the business goes well, you be needing to spend more for hardware, then if you've already invested in better boxes, you won't have to do this. But theres a plus, you get a completly seperate box which you can use for servers. 1+1 = a bit of redundancy, one box goes down, only the clients on that box goes down, then if 1 box goes down, all your clients go down.
E5620's are about the same price as the E5520s are they not? And offers more cache, and a bit higher clocks, while a lower power consumption rate. Though there not 6 cores ; )
