While it does seem to be slightly outdated, this is the best cvar list for TF2 I can find in easy-to-read HTML: TF2 cvar list

cvarlist log cvarlist.txt will dump everything to a textfile in the srcds modfolder

I am trying to use: (Cvar commands)
tf_max_health_boost "1.5"
Modifier of how much health can be overhealed [1.5 = 150%, 50% overheal]
weapon_medigun_charge_rate "40"
Amount of time healing it takes to fully charge the medigun.

Neither seem to work when I put them in my server.cfg
