eating in restaurants alone abroad

I'll be going to Munich next year for a few nights for a city break. First time abroad solo.

Would it be weird to go to a restaurant alone? I have no problem with going to hotel restaurant as hotels will be used to people travelling alone (business trips, etc), but I feel standalone restaurants are more aimed at couples/groups.

Not at all. I ate alone many times when travelling on business, mainly in restaurants not connected to the hotel. All over the world, including Germany.
Solo recreational travel is something that's pretty widespread nowadays. We see loads of lone travellers when we're eating out on city breaks, often looking at guidebooks planning their next day, reading a book, or just chilling out.

I used to feel weird eating alone too, but now I actually enjoy it. It gives me time to chill, people-watch, and really enjoy my food without distractions. One of my best solo meals was at https://khumhomrestaurant.com in Bangkok—the staff were super welcoming, and I didn’t feel awkward at all. I even chatted with a couple sitting nearby. Solo dining can be surprisingly relaxing once you get used to it.
