How many servers can i host?

I know this is true but i want like all of the stuff the server host sets up for you like swiftpanel which i would guess i could install on my own. If I do build the server and get it colo'ed instead of renting i would like it to be in Chicago.

yes, purchasing a server from a GSP is usually more cost effective for most people. if you are colo'ing a box in chicago, i would go with fdc for a personal server. they ran out of space, but supposedly have more built out now.

Well how much do they usually cost and all of that because i mean this could be a possibility so i would like to know my options.

1u is $39, it think 2u is like $59 (http://www.fdcservers.net). internap dedicated is dirt cheap @ $20/mbps and XO is $7/Mbps. gigenet and ubiquity are other good chicago options, if you are willing to pay more for slightly better uptime, but for a personal server probably not worth it.

Hm these prices look pretty nice so i could actually collocate for a good amount cheaper with faster internet.

yeah even if you went with xo, its not the best (but their peering seems to have been improving lately), but its probably good enough for a personal server. then again, thats about as cheap as Internap comes without huge commits.
