I prefer Linux. Think about it, you can either run Windows which takes up alot of resources, or you can run Linux in command line without all the bloat.
I used to run 6+ CSS servers on my linux dedicated box which was also running a RO server, and websites. Using screen allowed me to keep my session open while not in shell, and allowed me to switch back and forth between servers to check on them, run commands, restart, etc.
