TF2 Ded Server - additional Gear

I've never set one of these up before, so hopefully this isn't a dumb question.
Is there a cfg setting for disabling/enabling additional content in the game. For example guns people have earnt/bought?
For our regular games we want people to have access to all their gear, but for our tournament we want an even playing field with only default gear available.

There should be some plugins for that, this is not the site for that. Go to http://forums.alliedmods.net/ and look around the "sourcemod" section a bit, there you will find all the answers you need!

So there's no native option for that? I assume the server allows full gear by default?

Yes, you need a plugin to restrict only default weapons.
