apparently you or someone else did a apt-get dist-upgrade at some earlier point. afaik only the apt-get upgrade will actually install the updates.

I re-installed the server with Ubuntu Server 11.04, just waiting for kernel.org to come online now!

Yes i noticed that too. I think that they are trying to skip squeeze somehow... as my net-installer for squeeze (6.0.1) installs the wheezy version instead...
