Win 2K3 or 2K8 R2?

Hey SRCDS Forums,
It's been a while since I was in the Srcds scene, but now I'm back.

I'm currently running a server on a Windows 2008 R2 VPS, and am considering moving to another, better VPS host (nfoservers).

What I'm wondering is, which one of the OS's are better?
I heard Windows 2003 minimizes lag, but I'm not too sure. I also heard that it's recommended RAM is 256MB, versus the Windows 2008 R2 req, which is 512MB.

My VDS Specs:
1 Full HT Core i7 @ Whatever Clock Speed
1024MB RAM
2,000GB Bandwidth

Which would be more optimal, and which would you guys recommend?

P.S.
I'm hoping to run these game servers:
1 Garry's Mod server, 28 Slot, 33 tick, 34 FPS, Updaterates @ 33/34, Rate 30k
1 Tf2 Server, 24 Slot, 66 Tick, 67 FPS, Updaterates @ 66/67, Rate 15k/30k

^Is that even possible on one core?!

Short answer, no that wouldn't cut it. You would need at least two cores and a bit more RAM especially if you plan on running a GMod server. I would recommend looking for a more powerful VPS.

Alright, well I'm looking into Linux.
I've used it a bit before, but I'm not the biggest fan.

Also, does anyone have any decent hosters, with fast cpu's?
