Choose the one you like most and modify it to your needs.
Easy and out of the box are debian/ubuntu But all Distros have their strong and weak point. Just try some at a local pc and see which fits best to your needs.

I used to use CentOS but have now migrated to Ubuntu and I like it much more. It is much better out of the box and is easy to modify.

A not complete List:
debian -> easy to use out of the box, older packages (but debian patched to secure), stability comes first here ubuntu -> easy to use out of the box, but is more like we need the newest versions not the most stable gentoo -> you need to compile everything on your own defnitly not for linux newbies Red Hat -> enterprise distro aims for stability (but not free?!) Fedora -> free Red hat but with removed features CentOS -> Tries to rebuild redhat and is free. Some packages like the kernel are really old (but patched). It is not the best to run gameservers out of the box Distros are more like a CMS for Linux. Depending on which one you choose you get different precompiled binarys, libs and so on. Some non free enterprise versions will support you, offer SLAs and such. Using GNU/GPL Distros you need to rely on their community for help. With all you are able to replace the precompiled packages with your own or install yours instead of the precompiled ones. That is why choosing a distro is more like what kind of CMS do I like. Some are easier to use if you want to run gameservers out of the box. But if you put some work in it all Distros will perform nearly the same.

most people are fine with debian and derivates (like ubuntu). centos is known to make problems sometimes (which can be evaded with some effort, like terrorkarotte said).
