aboutn the cpu choise

i'm going to open a gps but i'm not realy skilled in wich is the best cpu choise

is really convenient a dual quad over a single quad? even if i for example in the quad i'll install N gameservers and in the dual quad 2xN gameservers?

there are some specific features that make the difference from a cpu to others? (cache? ht? ecc.) or desktop cpu and xeon?

My targhet will be gameservers 12-14 slots private with no mod and i think i'll use a normal kernel.
