Which linux distro do you guys recommend is the best for running dedicated servers?
Currently I have ruled out these definitly, fedora, mandrake, gentoo (gentoo due to being very hard to install remotely...).

Gentoo is not very hard to do remotly.

Well throughout the day I have looked at some distros, I have narrowed it down alittle, anyone have any experience with CentOS or WhiteBox Enterprise?

I'd echo the suggestion to try Slackware. What are your reasons for ruling out the distros you mentioned? Slackware is designed for running on servers and I've used it for several years now and its served me very well. I've never installed remotely, but if you get stuck and ask on alt.os.linux.slackware on usenet there is a wealth of knowledge there.
